Cook for 20 minutes at 180 degrees Celsius with the lid on, then remove the lid and cook for a further 5 minutes.
Spoon the cous cous into the middle of a shallow bowl or plate and top with the chicken thighs, one resting on the other for height. Spoon over any remaining sauce left in the dish.
Garnish with some chopped parsley and pomegranate pearls and serve!
